The region is split into two: Sauternes and Barsac.

Each of them have their own appellation, of which Sauternes is the most well-knownGeographically, both are separated by the Ciron river.

Sauternes wines have an overwhelming bouquet of ripe fruit, honey and a distinct botrytis touch .Botritys cinerea is a benign fungus which, with the help of mother nature, brings about a noble rotting processOverripe grapes lose their moisture, thus increasing the sugar concentration.

This results in lush sweet flavours with enough fresh touches plus wines that can be stored for an extremely long period of time.
